This recipe is one of my Fall favourites. I have quite the sweet tooth, so this is a wonderful alternative to a handful of halloween chocolates. I've infused the recipe with our Calm Tea because I love the flavours of cinnamon, orange, and chamomile that seep into the apples, while the liquorice root provides a natural sweetness. Don't be fooled into thinking that this will have that candy-liquorice flavour, what lends that to candy is actually star anise! I hope that this recipe keeps you cozy and comforted all through the season.
Ingredients 5-10 small apples (or 3-5 medium apples) 2 tbsp lemon juice 4 tablespoons butter or coconut oil 2 tsp ground cinnamon 1 tsp allspice ⅓ cup brewed Calm Tea 2 cinnamon sticks Optional: 2ml Reishi mushroom tincture from Rainbo |
Directions
Peel and core your apples however you’d like, then chop them into 1” pieces. While you’re doing this, boil your water for tea. Once boiled, let the 3 tbsp tea steep for as long as possible into 1 cup water so that you get a concentrated flavour.
Add everything to a large pot or dutch oven and stir to coat the apples in spices and liquid. Bring to a boil, then reduce to a simmer for 45 minutes, stirring occasionally.
Eat them on their own, or serve with ice cream and granola. Another delicious idea: if you added them to some puff pastry sheets for apple turnovers! The options are endless, but I bet you'll be eating them by the spoonful!
*A note on reishi mushrooms:
I have been using Rainbo tinctures for a year and a half to support my autoimmune health, and love including them into my morning elixirs and baking. If you're curious, you can read more about them on Rainbo's website.
