If you’re an Armcherry like us, you might have heard Monica talk about the salad she “invented” on the Eric Dane Fact Check (1:15:21). I first made it in July when my SIL came over for a girls weekend. We quickly became obsessed with it. It’s the simplest recipe in the world. In fact, it’s not much of a recipe at all as all the portions are pretty arbitrary. You could add more celery, or less apple if you want and it’s still going to be a good salad. I like to use BBQ’d chicken thighs but a rotisserie chicken is what Monica calls for. She also just puts all the ingredients on a cutting board and “chops it to smithereens”. This is a quick and easy meal that will become a staple.
Ingredients
4 cups of arugula
4 chicken thighs (or rotisserie chicken)
2 celery stalks
1 large apple
1 cup coarsely grated parmesan cheese
2 tbsp chopped chives
Freshly cracked pepper
⅓ cup Extra Virgin Olive Oil
2 tbsp ACV
1 small shallot, diced
1 tsp dijon
1 tsp honey
Pinch of salt
Recipe:
- Combine the olive oil, ACV, shallots, dijon, honey and salt into a mason jar. Close tightly and shake until combined.
- Chop the chicken, celery, and apple into bite sized pieces. Finely chop the chives.
- Add all ingredients to a large bowl, then add the dressing and toss together. Add salt and pepper, and/or more cheese to taste.
