The Monica Padman Salad

The Monica Padman Salad

If you’re an Armcherry like us, you might have heard Monica talk about the salad she “invented” on the Eric Dane Fact Check (1:15:21). I first made it in July when my SIL came over for a girls weekend. We quickly became obsessed with it. It’s the simplest recipe in the world. In fact, it’s not much of a recipe at all as all the portions are pretty arbitrary. You could add more celery, or less apple if you want and it’s still going to be a good salad. I like to use BBQ’d chicken thighs but a rotisserie chicken is what Monica calls for. She also just puts all the ingredients on a cutting board and “chops it to smithereens”. This is a quick and easy meal that will become a staple.

Ingredients

4 cups of arugula

4 chicken thighs (or rotisserie chicken)

2 celery stalks

1 large apple

1 cup coarsely grated parmesan cheese

2 tbsp chopped chives

Freshly cracked pepper

⅓ cup Extra Virgin Olive Oil

2 tbsp ACV

1 small shallot, diced

1 tsp dijon

1 tsp honey

Pinch of salt

Recipe:

  1. Combine the olive oil, ACV, shallots, dijon, honey and salt into a mason jar. Close tightly and shake until combined.
  2. Chop the chicken, celery, and apple into bite sized pieces. Finely chop the chives.
  3. Add all ingredients to a large bowl, then add the dressing and toss together. Add salt and pepper, and/or more cheese to taste.
